Description: The CTM is a Modular Steam Cooker or Blancher. The CTM consists of an Infeed Module, an Outfeed Module, and one or more Center Modules. The Laitram CTM (Constant Thermal Modular) Cooker and Blancher is so named because your product is cooked by passing through a chamber containing a "pure steam" environment of 212°F (100°C) saturated steam.
